PREP: Soak 6 skinless, boneless chicken breasts in 1 quart of water with 1/4 cup of Tender Quick for 30 min. INGREDIENTS: 1 stack Ritz crackers (crushed), 1 teaspoon Lawry's seasoning salt, 1 teaspoon salt, 1/4 teaspoon pepper, 1 cup milk. DIRECTIONS: Combine all the dry ingredients and mix well. Dip chicken in milk and roll in dry ingredients. Fry in butter.

INGREDIENTS: 2 ounces of morton tender quick, 1/2 teaspoon black pepper, 1 pinch saltpeter, 4 teaspoons brown sugar, 5 ounces of water, 5 lbs ground chicken. DIRECTIONS: mix together and cook like regular burgers. This recipe works best if the chicken is ground up real fine.
